layer cakes

i’ve been really into making layer cakes recently.

here’s a pumpkin cake with chocolate frosting and a crunchy topping of candied ginger and candied pumpkin seeds. i modified this recipe (mostly to make it easier – canned pumpkin, regular butter, etc) and i really recommend it. it’s moist and light and delicious.


then i made a mini, four-inch version (still two layers!), this time with molasses-brown sugar frosting


and a four-inch vanilla cake with lemon curd filling, vanilla frosting and candied lemon slices on top.


finally, a chocolate-candy cane cake. it’s like a trader joe’s candy cane joe joe, but a cake. the filling is vanilla butter cream frosting with crushed candy canes beaten in, and there’s bittersweet chocolate ganache on top.
