gingerbread cake

i made this gingerbread cake from smitten kitchen, and she’s right – it’s delicious and super easy. in fact, i made it in one pot! doesn’t get much better than that. plus, it’s spicy and dark and moist.

my only complaint is that mine was pretty dense – more dense than her picture looks – and sort of sad and flat. maybe my baking soda and baking powder are old? (i mean, they are old, but are they old enough to have lost leavening properties? i didn’t think so…) in any case, i would have liked a little more lift.

also, the last step – sift dry ingredients over wet, then stir the wet and dry ingredients together until just combined – didn’t really work. despite sifting, there were lumps of flour that didn’t mix in, so i had to overmix a little (maybe that contributed to the flatness?) and even still the final product was a little marbled… not in a good way. it didn’t affect the flavor, but the color wasn’t perfect.


there’s no way to serve gingerbread cake other than dusted with powdered sugar and smothered in sweetened bourbon whipped cream. i also grated some fresh nutmeg on top, creating a whole eggnog effect, which is making me quite excited for eggnog season!
