broccoli stem salad

i’m always dismayed about paying for the hulking broccoli stalk and then only using the crown. i try to save it but so far, my attempts to actually use it are sporadic and unsatisfactory. sometimes i’ll chop it up and throw it in a stir fry.

but i saw this general idea in a magazine recently (was it martha stewart?) and did a variation.


that’s the stem of the broccoli peeled and sliced on the mandoline. i drizzled it with sesame oil, dribbled with sriracha and sprinkled with black sesame seeds.

a simple, unusual, delicious and healthy snack.
