this is my new favorite thing to eat. could be a side dish or an entree if you are morgan or eating alone.
it’s salty, crunchy, soft, tangy… the perfect balance.
layer frozen lima beans on a baking sheet. toss with a little olive oil, salt, pepper and garlic powder. (don’t skimp on limas! they shrink up much more cooking them this way than boiling/steaming)
roast at 400 degrees for 30 minutes. some will start to get a little brown and crispy.
when you serve, drizzle with lemon juice and sprinkle with plenty of parmesan.
absolutely delish. if you think you don’t like lima beans, i’m sure you’ve never tried them like this. i could have eaten three times as much.
