spring rolls

this is one of our new favorite summer dinners. not only is it super yummy and healthy and full of veggies, it’s so fun to roll your own at the table.

the only two ingredients that you might not be able to find at a regular (ie. non-asian) grocery store are the rice sticks (noodles) and the wrappers, but don’t let that deter you.

prep means making a lovely table salad including carrot sticks, daikon radish sticks (use jicima if you can’t find daikon), mint leaves, basil leaves (thai or regular), green onion and cilantro. also lettuce leaves, lime, jalepeno. meat or shrimp… all to your taste.

i hope you’re getting the idea that this is an as-you-like-it meal.

you also need to soak your rice sticks in hot water for 15 or so minutes to soften them. drain well. and you can make some kind of dipping sauce, either peanut or spicy.

at the table, have a shallow plate filled with water. take a wrapper and soak it for a few minutes until soft. shake it a little to drip-dry, and move to your plate.

load up with yummies.
