a twist on eggs benedict

this makes a superb breakfast, and an even better dinner if you’re into that sort of thing (which i most decidedly am).

i was inspired by an offering at the wolfeboro diner where you can order eggs benedict with tomato instead of meat. but we can do better than fatty hollandaise sauce, right?

start with a hearty piece of bread – i used sourdough – and toast it up nicely.


then, fry a beautiful egg in a little olive oil with plenty of salt and pepper (poached eggs permitted, too!)


layer your toast with several slices of tomato


add the egg


top with avocado dressing (from this recipe over here)


and fresh chopped basil!


  1. Instead of the avocado dressing, how about some pesto? Presto!
