chickpea salad

sometimes when i’m home by myself for dinner, i’m naughty and just eat toast with jam or cereal or something. but sometimes, i pull it together and make something both yummy and healthy (and that he would never consider to be “a meal.”)

case in point:

chickpeasalad

chick pea salad.

about 3/4 of a can of chickpeas, drained, some finely minced red bell pepper; a little salt / garlic powder / black pepper; a splash of champagne pear vinegar and a drizzle of truffle oil. maybe plop it on greens if you need more bunny food.

this is why i’m (mostly) a vegetarian. i think this is a perfectly satisfying, delicious, and complete dinner.
