kale and apple salad

i will admit that it took me awhile to come around to the idea of eating raw kale. but it’s just so gosh darn healthy! and sometimes, after a day of eating crap, that’s exactly what fits the bill.

i’ve found the trick to enjoying raw kale is to cut it very fine. i generally slice the leaves lengthwise into one-to-two inch sections, then cut them the other way into thin ribbons. also consider removing the stems if they are especially tough.

toss a handful or two of ribboned kale (here i used what i call black kale, but is apparently also called lacinato or dinosaur kale – i love it) with some apples (i cut mine into matchsticks) and chopped white raisins.


for dressing, i made my usual: champagne-pear vinegar with garlic powder, salt, pepper, and olive oil.

feels good in the tummy.
