fancy mushroom pasta

so this is one of those things i designed in my head (see: cake, dream) and just had to make.

doesn’t matter that it’s one of the least healthy dinners i’ve probably ever made.

it was phenomenal. if i do say so myself.

grandma had given us a gift card to saveneur’s, a super fancy, high quality food market in cambridge that is known for being patronized by one julia child. you might have heard of her?

anyway, we bought some super-great ingredients and wanted to make some first-class dinners.


in one pan, i sauteed minced onion and minced mushrooms (about four large white and two large portobello caps). i was going for a super small texture because of the pasta shape we bought.

i just did it in a little olive oil, salt, and pepper.

in another pan, i made brown butter. five tablespoons of butter, a couple chopped sage leaves, and a pinch of salt on medium-low heat until it starts to brown. then you take it off the heat, add two tablespoons of milk (or heavy cream) and mix well.

once the pasta was cooked, i combined the mushrooms and the butter and the pasta. and about a third of a cup of grated parmesan.

for a garnish, i sliced shitakes and sauteed them in butter, olive oil, s & p, and a drizzle of white truffle oil (left over from valentine’s day mac and cheese!) until they were nicely browned on both sides.
