cast iron skillet pizza

making a very small pizza and don’t want to fire up the whole oven? i made this one with some leftover WFs dough in a cast iron skillet on the stove top.


i spread the dough right in the (cold) pan, sauced, and parmesean’ed it, and then heated the skillet to medium. once it started cooking, i turned it down a little, and because my cast iron doesn’t have a lid, i used a cookie sheet to cover it a little so the top cooked as the bottom did.

i have to say, the bottom crust was great – so crispy – the best i’ve had outside a woodfire oven pizza restaurant.

top with a little rocket!
