toad in a hole

just a fun way to spice up your classic egg-on-toast breakfast.

start by cutting a hole in a thick slice of bread. i used a 1/3-cup measure. then fry up the slice (and the hole!) in a little olive oil.

remove from pan when brown and add a little more oil.

place raw-side down in the pan, and crack an egg in the hole.

i actually cooked it with a lid on the pan because the egg is thick and i didn’t want the bread to get too brown while it was cooking through. make sure the heat is pretty low, too.
