banana-blueberry breakfast thing

so, this creation didn’t turn out exactly like i envisioned, but it was still a big hit. not quite a coffee cake, i’m not sure what to call it. and i will try to recreate it here for you, but there was a lot of dumping and guessing and adjusting things on the fly.

i started with one egg, one mashed brown banana, one cup of buttermilk, 1 tablespoon of oil, a teaspoon of vanilla, and a small pinch of salt.

mix well.

then i added 2 cups trader joe’s multigrain baking and pancake mix and a third of a cup of oatmeal. also, some nutmeg.

i spread this into a 8x8x2 glass baking dish. (the oven is preheating to 350 degrees.)

next, i made a mixture of three tablespoons butter, three tablespoons brown sugar, three tablespoons of demerara sugar (that’s the large-grained brown sugar. for texture), a sprinkle of cinnamon, and a pinch of salt.

mix together well with a fork. fingers work even better!

over the batter, i spread about one and a half cups frozen blueberries, and then sprinkled the sugar mixture on top.

bake for close to an hour, until a tester stuck in the middle comes out clean.

i was going for coffee cake, but because of the yummy, gooey layer of blueberries and sugar on top, you had to spoon it out into a bowl and eat with a spoon. so? yum.
