mayonaise pancakes

bear with me here…

sometimes, all i want for breakfast on a sunday morning is a freakin’ pancake, ok? and sometimes, i don’t have eggs in the house. (or cornstarch, which is a fairly common egg-replacer in baked goods.)

so i’m looking around for a substitute, and there’s a bottle of mayonaise, just hanging out in my fridge, all egg-y and oil-y… which happen to be two of the three ingredients you add to trader joe’s multigrain baking and pancake mix. et voila.

to a cup and a half of pancake mix, i added one and a quarter cups milk, two tablespoons of mayonaise, and a teaspoon of vanilla.

i also added cinnamon, a little ginger, and some nutmeg to the dry mix to round of the flavors.

cook as usual, and add a sliced apple before flipping if you like that kind of thing…

ps – i guess i should have mentioned that these don’t actually taste like mayonaise. they taste like pancakes. and dern good ones, if you ask me.

  2. although this is an ingenious idea, i made my regular pancakes, but put the apples in as you did in whole slices with the star in the middle instead of my usual little chunks. they were a big hit. thanks!
