christmas stollen: 2011

per tradition, i made a christmas stollen this year.

this year’s modifications:

1. for dried fruit, i used mostly cherries (they are my favorite and SUCH a guilty pleasure because they are so expensive), combined with fewer cranberries and some white raisins. i soaked them in sloe gin because i thought i had rum, but it turns out i didn’t… no harm, no foul!

2. i usually put a cinnamon-sugar swirl inside, but since i was giving one loaf to my grandparents who aren’t allergic to nuts, but do prefer low-sugar, i did a toasted pecan-cinnamon swirl for them.

3. traditional powdered sugar topping. as soon as they come out of the oven, you pat them with confectioners sugar.

i just really love this stuff. perfect with coffee for breakfast christmas morning!
