girls weekend getaway

six of us took a little weekend getaway to the blue ridge mountains for wine tasting, relaxing and skiing (in theory). everybody took turns cooking, which made it even better.

dinner upon arrival was shrimp pasta with a beet and orange salad on the side (and champagne).

for breakfast the next day, i made baked blueberry oatmeal, although this time i served it in a bowl with a little milk, which i highly recommend. (i also cut the amount of butter in half.) and of course, there was bacon.

lunch was at the batesville store. i had egg salad made with just eggs, mayo and honey mustard – usually i won’t touch egg salad without relish in it, but this twist on the classic worked – and shared an order of amazingly rich mac and cheese. we learned after the fact it included five cheeses and one stick of butter per pound of pasta. ugh.

also, if i ever move to the middle of nowhere and open a little store, it will be just like this one. they sell homemade food and baked goods, local bottles of wine, local art, sundries… plus they have live music and bbq buffets on weekends. cid runs the store and his wife is the cook. jealous.

dinner that night was short rib ragu on polenta. that’s a gremolata on top of herbs and garlic.

i am definitely going to make that myself before it gets too warm and springy! he will love it.

the cocktail of the evening was pink grapefruit juice, vodka, club soda and rosemary simple syrup.

and finally, sunday breakfast. poached eggs, prosciutto and cheddar cheese on hot-from-the-oven buttermilk biscuits.

don’t you wish your girlfriends were hot (cooks) like mine?
