beef jerky

for christmas, i made him beef jerky. or as i like to call it, MAN CANDY.

start with 2 pounds (says the recipe – i used about a pound and two-thirds and it was more than enough!) of flank steak that you have put in the freezer for one hour.

freezing makes it easier to cut very thin into eighth-of-an-inch slices across the grain.

let marinate for 3 hours (in the fridge) in a mixture of 2/3 cup soy sauce and 2/3 cup worchestershire sauce, 2 tablespoons dark brown sugar, 1/2 teaspoon each of onion powder and garlic powder, and some hot pepper flakes to taste.

then array on a cooling rack set over a baking sheet and bake at 200 degrees (leave the oven door cracked open) for 3 hours (mine were done a little sooner) until dried out.

i had to do them in two batches because my pan wasn’t big enough. first batch…

let cool before eating them all. it’s hard, but try. cooling makes them even better.

they are flavorful and chewy, and keep for up to 2 weeks in an air-tight container. if they last that long.
