tiny tacos

these were inspired by my very first guest blog. add some champagne and pint of ben and jerry’s and you have a tiny taco girl’s night champagne thursday party!

i started by mashing up some dark red kidney beans

with a little olive oil, salt and pepper. if i had more “mexican” spices (or even knew what that meant) i would have added them, too.

put a tiny scoop of bean into a “scoops” corn chip, and top with a tiny pinch of cheese.

lay out on a baking sheet and bake at 350 degrees until the cheese starts to bubble.

meanwhile, i made a fresh salsa of corn, tomatoes, onion and cilantro.

any salsa would do, of course. and if you have other favorite taco-toppings you can’t live without (sour cream, anyone?), add that too.

top tiny tacos with topping and taste!
