apple flapjacks

here’s a hot tip for spicing up pancakes.

(i don’t know why i felt compelled to call these “flapjacks.” i don’t ever say flapjack, but for some reason it just seems to apply here, don’t you think?)

mix up your batter – i used stonewall kitchen gingerbread pancake mix with extra oats. i always add oats to my pancakes – and spoon it onto a hot griddle.

then place one thinly sliced, cored, peeled apple piece on the top of each.


continue cooking as usual, flipping the pancakes when you get a bunch of bubbles in the batter.

the apple gets a little browned, soft and delicious!


don’t forget to serve with warmed maple syrup!
