bachelorette brunch: part I

after a night of debauchery and fun, i was in charge of brunch for nine hungry (and hungover) bridesmaids and bridesmen. what better way to kick it off than with a belini? for those of you who may not know, that’s champagne and peaches. like a mimosa, but BETTER!

sometimes it’s served  with sliced peaches and sometimes with peach juice or necter, but i decided to take a couple fresh peaches and blend them into a puree.

and then we spooned some into each glass and poured the champagne on top.


to be completely honest, next time, i would stick with slices or juice. the puree made the champagne fizz up and then bits stuck to the sides of glass and looked a little icky. but it tasted fantastic!
